Summer Soup Round-Up

8 recipes to keep you soup-er all summer long

I’ve always loved soup.

Chicken soup. Beef stew. Borscht. Minestrone. Gazpacho. Cream of mushroom. Tomato. Butternut Squash. Lobster bisque.

Soup is a perfect meal served in the comfort of a bowl. You get everything you need all in one place. Broth is a rich source of gelatin, collagen, and glycine for gut, skin, and joint health. The vegetables full of vitamins, minerals, fiber, and phyto-nutrients.

Put a bowl of soup in front of me and I’m a happy camper. My husband is the same way (no wonder we get along so well). I make a lot of soup all throughout the year, not just winter. But summer can be a tricky time for soups (with them being typically being served warm and all that simmering time). So what’s a girl to do when it’s too hot to cook but you’re jonesing for your daily dose of broth?

Enter the Summer Soup!

These soups need very little cooking time, some are cold so you don’t even have to turn on the stove. I’ve tracked down 8 paleo and AIP compliant soups to keep you feeling soup-er all summer long. (You may need to make a tweak here and there to leave out the black pepper for full AIP compliance)
